VINTAGE CONDITIONS
A normal year without extreme temperature differences after spring. The yield was below 5000 kg per hectare.
WINEMAKING PROCESS
Harvest has been done manually on the last cool mornings of September. Grapes are destemed and the juice is exctracted gently and transfered in a stainless steel vat to cool down for settling in order to clear. While wine fermenting is bottled, capturing the last bubbles of carbon dioxide. Wine ages for 18 months with its fine lees in the bottles and disgorged. Instead of a liquer d'expedition wine is filled with the same. So we never add sugar (zero dosage).
